Yesterday I made an amazing low carb soup on Facebook Live and then had some friends over to try it out. It was a huge hit!!! It’s been rainy here in LA, so it’s the perfect weather for cozy meals. This definitely fit the bill! It’s super delicious and pretty easy to pull together. On Facebook Live, the soup was really chunky, but after I wrapped the video I wanted the soup to be more chopped. I pulled out my stick hand blender and chopped up the ingredients for about 20 seconds and I’m so glad I did! The soup seemed creamier without having to add any more cream. Low Carb Italian Soup:
Ingredients:
- 6 cups of chicken broth
- 6 Hot Italian Sausages
- 2 chicken breasts
- 1 large yellow onion (chopped)
- 3 cups of chopped kale
- 3 cups of chopped cauliflower florets
- 4 cloves of garlic (minced)
- 3/4 cup heavy cream
- 21 seasoning salute (from Trader Joes – if you don’t have access use an Italian Seasoning)
- Pepper
- Red Pepper Flakes
- Parmesan Cheese
I used my large dutch oven to make this, but you can use a slow cooker as well. First remove the sausage from the casing and place in the pot. Keep breaking it up until it’s fully cooked. Now add the onion and garlic. Let them “sweat” for a few minutes, then stir. You don’t want the onion to brown, just turn translucent.
While that’s cooking, grill the chicken breast separately with a little olive oil, a squeeze of lemon and 21 seasoning salute. I just like the chicken grilled instead of boiled in the soup. After it’s cooked, pull it apart in small pieces.
Once that’s done and the onions are cooked.. add the chicken broth and heavy cream. Now turn up the heat until the broth boils . Once the soup starts boiling, reduce the heat to medium-low and add the kale and cauliflower and let it cook for about 20 minutes.
Lastly, add the chicken breasts, a few dashes of 21 seasoning and pepper (you can add salt if you need to, but I didn’t)… then serve with grated parmesan cheese on top and a little parsley.
**Remember, I used a hand blender at the end for about 20 seconds. If you want the soup to be thicker, I would definitely recommend doing the same!
