In case you missed Facebook Live, I made the easiest summer soup. It’s a white almond gazpacho. If you haven’t ever had it before, it’s SUPER rich and delicious and took me literally 4 minutes to make. Yes, you still have to chill it, but honestly it’s about the easiest thing for you to make if you are entertaining this summer. Oh, and it’s VEGAN!! I assure you, it will be a hit. Ingredients (makes 1 soup)
- 1 cup cold water
- 3/4 cup of raw slivered and blanched almonds
- 1 small clove of garlic
- 1 tablespoon of white balsamic vinegar (or sherry vinegar if you prefer)
- 3/4 tablespoon of olive oil
- salt to taste
- white grapes to garnish
Place all ingredients (except grapes) in a blender and blend until mixture is completely smooth like cream. There shouldn’t be any little pieces of almonds left over. You can chill the soup in the fridge for about an hour and then garnish with 4-5 sliced white grapes (it gives this great crunch and balances the tartness from the vinegar). Also, I like to also add a dash of black pepper as well.
