The celebrated Shamrock Shake makes its rounds once a year and I’ve decided to make a healthy version for you to enjoy, before you move on to pints of other green beverages, of course. There are tons of different recipes online but I took what I had in my fridge (because I’m semi-lazy) and decided to give it a go, and I have to say… it turned out soooo good! Even Olivia loved it! Without using any artificial flavor or food coloring, the shake has that pop of kelly green, a creamy texture and is full of delicious ingredients. A fun and easy concoction to make and serve within minutes. See below for this simple St. Patrick’s Day treat! xo
SHAMROCK SHAKE (ONE SERVING)
- 1/4 Cup Coconut Ice Cream
- 1/4 Cup Almond Milk
- 1/2 Banana
- 1/3 Cup Spinach
- 1/4 Cup Fresh Mint
- 6 Drops Peppermint Extract (can add more if you want)
- 4 Ice Cubes
- Garnished with Vegan Chocolate Chips
Throw all of these ingredients into a blender and enjoy!
